This lasagne was our entry into Australia’s largest retailer. Back in 2013, the head of fresh foods at Woolies was at a hospital visiting a patient. He needed some dinner so decided to get a lasagne from the Hospital Cafe. Not realising he ordered the Posh Pumpkin Lasagne, he soon realised that this Lasagne had no meat in it! But it tasted better than any meaty lasagne he ever had! Instead of complaining to the cafe owner. He asked the cafe owner who was the supplier. Next thing you know I got a call from Woolies wanting to meet and discuss if they could buy our products. At first we were hesitant dealing with a large retailer like Woolies. But they were equally passionate about great food! It wasn’t difficult when we dropped all the corporate Jargon and got on to the food side of things. Before you know it, we have 10 products now available at most Woolies Metro Cafes.

The lasagne is layered with slow roasted pumpkin, wilted English spinach, Posh Foods home made pesto and Fresh Ricotta. A real hearty Vegetarian Option!
